Incident reports: Do not underestimate the value of an incident report. Review with your staff how very important this document is in your defense to claims. Don't leave blanks, and elaborate with detail wherever possible.
Zamboni logs: Logging your ice resurfacing activity can be extremely beneficial when a claimant alleges poor ice conditions. If a group rental declines to have the ice resurfaced, have them sign off.
Waivers of Liability: While not a complete defense, wavers confirm that you have notified the client they are skating at their own risk. Use them for ice rental, private parties, and even public skating if possible. Since laws vary from state to state, consult your attorney for specific wording and advice.
"Skate at Your Own Risk" Signs: While not a complete defense, you are putting the public on notice that they are participating in this activity voluntarily at their own risk. Informational announcements at the beginning and middle of public skating sessions are also helpful.
